* Exported from MasterCook * Swiss Onion Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds onions -- thinly sliced 1/3 cup butter 2 tablespoons garlic -- finely chopped 2 tablespoons dry mustard 2 teaspoons dried sage -- crushed --to 3 teaspoons 1/4 cup dry sherry 6 cups chicken broth -- and/or beef broth 1/3 cup butter 2/3 cup all-purpose flour 1 cup whipping cream salt croutons Swiss cheese slices grated Parmesan cheese In a large Dutch oven, cook the onions in 1/3 cup butter until the onions turn a dark golden brown. Add the garlic, mustard and sage. Stir in the sherry. Add the broth. In a medium saucepan, melt 1/3 cup butter; stir in the flour. Cook and stir the mixture until it is light brown . Stir the flour mixture into the onion mixture. Stir in the cream. Bring to boiling. Cook for 1 minute longer. Season with salt and pepper.
