* Exported from MasterCook * Thick Onion Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large Onions -- thinly sliced 1/4 cup Flour 1 teaspoon Paprika 1 teaspoon Salt 2 cups Water 4 large Potatoes -- peeled and sliced 2 cups Reduced-fat soymilk -- or rice milk In a large, heavy pot, steam-fry until golden and soft the onions. Stir in flour, paprika and salt. Blend well and add water. Cover and simmer for 30 minutes. Meanwhile, boil in enough water to almost cover until tender the potatoes. Mash the potatoes coarsely in whatever cooking water is left. Add the potatoes to the onion mixture with the soymilk (or rice milk) Add salt and pepper to taste.
