* Exported from MasterCook * Tomato-Onion Soup Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Mcdougall Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Onion -- diced 2 Leek -- sliced thin 1 Garlic clove -- pressed 4 cups Water 8 large Tomato -- chopped 2 tablespoons Parsley sprigs -- chopped 2 teaspoons Thyme 1 Bay leaf 1 teaspoon Basil 1 tablespoon Tamari soy sauce -- low sodium Preparation Time: 2:00 Saute onions, leeks, and garlic in 1/2 cup water until transparent (about 15 minutes). Add the remaining 3 1/2 cups of water, the tomatoes, parsley, thyme, basil, and the bay leaf. Simmer, covered, over low heat for 60 minutes. Remove cover; simmer for 30 minutes longer. Add tamari just before serving. HELPFUL HINTS: This soup is great with fresh, homemade bread. Add a green salad fro an interesting meal.
