* Exported from MasterCook * Dutch Style Pea Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups whole green peas 1 1/2 pounds spare ribs 1 1/2 tablespoons salt 3 large onions 6 small potatoes Soak peas overnight in rainwater if possible. Wash peas and parboil for 10 minutes in enough rainwater to cover. Drain, add 1 gallon hot rainwater which has been strained through a cheese cloth to the peas. Cook for 1/2 hour and add salt and spare ribs which have been scalded and cut in small pieces. Cook about 1/2 hour or until meat is almost done then add potatoes cut in very small cubes and sliced onions. Cook 1/2 hour longer. Have a slower fire the last 1/2 hour, because it will burn easily after the potatoes are added. More water may be aded if the soup seems to thick.
