* Exported from MasterCook * Fresh Sweet Pea Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Fresh peas in the pod 2 cups Onion(s) -- chopped 1 medium Leek -- cleaned and chopped 1 1/4 cups 1 Unpeeled carrot -- chopped 2 tablespoons Olive oil 3 cups Vegetable stock 1 teaspoon Salt 1/2 teaspoon Pepper -----GARNISH----- Saut‚ed leeks -- celery and carrots 1. Wash the pea pods, then shell the peas. Reserve the pods. 2. Saute the onions, leek, and carrot in the olive oil until they wilt, about 5 minutes. Add the pea pods and the stock. Bring to a boil, reduce the heat to low, cover,and simmer for 40 minutes. 3. Strain the stock, discard the solids, and return the liquid to the saucepan. Add the peas and simmer until they're tender, about 5 minutes. Remove the peas and pur‚e them in a little of the stock. Return the pur‚e to the stock and simmer for 1 minute. Add the salt and pepper.
