* Exported from MasterCook * Mexican Pea Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Gifts Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cl Garlic -- minced 1 lg Onion -- chopped 2 tb Oil 1 1/4 c Green or yellow split peas 1 qt Water 1 cn Chopped green chilies (4oz) 2 ts Oregano leaves -- crushed 2 ts Ground cumin 1 cn Tomatoes (16oz) 1 pk Frozen corn kernels (10oz) 1 lg Green bell pepper 1 c Cheddar or Monterey Jack . cheese -- shredded In large saucepan over medium high heat, cook garlic and onion in oil until tender (about 5 minutes), stirring frequently. Add remaining ingredients except cheese. Heat untll boiling, then reduce heat to medium low, cover and simmer 30 to 40 minutes longer or until peas are just tender.
