* Exported from MasterCook * New Orleans Split Pea Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Meats Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 slices Bacon; chop, crisp -- drain 4 tablespoons Bacon drippings 1 pound Ham -- cube 1 pound Split green peas 2 cups Onions -- dice 2 Ribs celery -- chop 3 Carrots -- sm dice 20 milliliters Garlic -- mince 2 quarts Chicken stock 2 teaspoons Worcestershire sauce 1/2 teaspoon Black pepper 1 pound Pickled pork -- or 2 Ham hocks Salt Parsley -- garnish In the bacon drippings, saute the ham, onions, celery carrots and garlic until they begin to wilt. In a Dutch oven, bring stock to a boil, add the pepper, Worcestershire, pickled pork, ham/onions, bacon and peas. Reduce heat and simmer for about 1-1/2 to 2 hours, stirring occasionally.
