* Exported from MasterCook * Baked Potato Chicken Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large Baking potatoes -- - Cooked and cooled 3 slices (thick) bacon -- diced 1 medium Onion -- chopped 4 cups Chicken stock 1 1/2 cups Claked cooked chicken or- 2 cans chunk chicken in- Broth Salt and pepper -- to taste 2 tablespoons Plain lowfat yogurt 1 tablespoon Snipped fresh chives Recipe by: Family Circle Busy Cooks Cut the potatoes into quarters lengthwise; do not remove the skins. Cut each quarter in 1/4-inch-thick slices, discarding the end slices, and set the potatoes aside. Saute the bacon in a deep saucepan over medium heat til crisp. Remove the bacon with a slotted spoon and drain on paper towels. Por off all but 1 tablespoon of the drippings. Add the onion to the saucepan and saute til translucent. Add the stock and bring to boiling. Add the potatoes and the chicken. Simmer the soup for 5 minutes, stirring once, or twice, to heat the chicken and the potatoes.
