* Exported from MasterCook * Chicken Gazpacho Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Chicken Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon Cooking oil 3/4 pound Chicken breast -- skinless boneless -- cut into 1 inch pieces 1/2 teaspoon Ground cumin 1 can Mexican-recipe stew tomatoes -- (14 1/2 oz) 1 cup Water 1 medium Zucchini or cucumber -- coarsely chopped 1 small Green pepper -- coarse chopped 1/4 cup Celery -- sliced 1/4 cup Green onion -- sliced 1 tablespoon Vinegar 2 teaspoons Chicken bouillon granules 1/2 teaspoon Dried basil -- crushed ds Hot pepper sauce Preheat wok or large skillet over high heat; add 1 tbsp. cooking oil. Add chicken. Stir-fry 3 to 4 minutes or till no pink remains. Sprinkle with cumin, stir-fry 30 seconds more. Transfer to a large bow. Cut up any large tomatoes and add with water, zucchini, green pepper, celery, green onions, vinegar, bouillon, basil, and hot pepper sauce. Cover and chill 4 to 24 hours.
