* Exported from MasterCook * Elsah Landing's Chicken and Dressing Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups -water (or to cover) 1 Onion -- quartered 1/4 cup Celery leaves -- chpd 1 Chicken breast -- to 3 1 Bay leaf 1/4 cup Parsley -- chpd 1 cup Celery -- diced 1 cup Onion 2 tablespoons Butter 3 cups Fresh white bread crumbs 1 teaspoon Sage 1 teaspoon Pepper 1 teaspoon Poultry seasoning 2 tablespoons Chicken stock base 2 cups Evaporated milk Cook chicken in water with quartered onion, celery leaves, bay leaf, parsley until tender. Remove chicken, chop meat, strain and reserve liquid. Saute 1c onion and 1c celery in butter until soft. Do not brown. Add bread crumbs and more butter, if needed. Stir until well coated. Combine with reserved broth. Combine chicken stock and sage, pepper, poultry seasoning; add milk. Stir into other ingred., heat to simmer. Add more water if too thick. Taste for seasonings.
