Cook over high heat until mixture comes to a full boil (8 to 10 minutes) . Cook over medium high heat, stirring occasionally, 15 minutes . Stir in chicken and olives; continue cooking until heated through (2 to 3 minutes) . Ladle into individual serving bowls. Sprinkle each serving with parsley.
