* Exported from MasterCook * Mexican Turkey Tortilla Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 bunches green onions -- trimmed and chopped 3 cloves garlic -- minced 2 jalapeno peppers -- seeded and chopped 1 tablespoon chili powder 1 teaspoon dried oregano 2 teaspoons ground cumin 2 corn tortillas -- (6" diameter) 8 cups turkey or chicken stock 1 can plum tomatoes -- (28-ounce) undrained 3 tablespoons fresh lime juice Salt For toppings: 2 cups leftover cooked turkey -- cut in thin julienne -- strips 1 small ripe avocado -- optional 1/2 cup fresh cilantro leaves Pre-packaged baked tortilla chips To make broth: Heat olive oil in a large soup pot over medium-high heat. Add green onions, garlic and jalapeno peppers. Saute until softened, about 5 minutes . Add chili powder, oregano and cumin; cook 1 minute more. Tear tortillas into small pieces and add to pot. Add stock, tomatoes and lime juice to the pot. Season to taste with salt. Simmer, uncovered, stirring occasionally, for 30 minutes. Strain broth through a sieve, pressing hard against the vegetables with the back of a spoon to extract all the juices and flavor . Heat broth, if needed, before serving. Ladle hot broth into soup bowls and garnish each serving with some turkey strips, a few slices of avocado and a sprinkling of cilantro leaves.
