* Exported from MasterCook * Sherried Chicken Soup a la Reine Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Chicken breast -- large 1/2 Green pepper -- cut in thin st 1/2 cup Mushrooms -- sliced 1/4 cup Flour 1/2 cup Sherry 1 cup Chicken broth 2 1/2 cups Cream (half and half) Pressure cook chicken for 12 minutes with 1 c water; salt and pepper to taste with a piece of celery and onion for flavor. Reserve broth and cut chicken into bite size pieces. Saute green pepper and mushrooms lightly in a bit of the butter. Make a white sauce with the rest of the butter (melt ed); flour and half and half. Thin with broth and add mushrooms, green pepper and chicken. Heat without boiling, add sherry and serve.
