* Exported from MasterCook * Carolina She-Crab Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Seafood Brunch Appetizers Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pint Milk 1/8 teaspoon Mace 2 cups Crab meat 1/4 cup Crab roe* -- or Egg yolks -- hard boil 1/4 pound Butter 1 pint Cream 1/4 cup Cracker crumbs -- crush fine 1/8 teaspoon White pepper 1/8 Onion -- grate 2 teaspoons Sherry 1 teaspoon Salt *May use hard-boiled egg yolks (mashed) as substitute for crab roe. Put milk in double boiler with mace. Allow to gently simmer a few minutes. Add crabmeat, roe, or cooked egg yolk, butter, and cream; simmer for 15 minutes. Thicken with 1/4 c. cracker crumbs and season with salt, white pepper and onion. Allow to stand on back of stove for a few minutes to bring out flavor.
