* Exported from MasterCook * INDIAN SHRIMP SOUP Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Seafood Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Cloves garlic -- minced or 1/2 tsp of -- (fresh is best) 1/4 teaspoon Powdered cumin 1/4 cup Butter -- dash of tabasco 1 1/2 cups Coconut milk 1 cup Cooked rice 1 1/2 pounds Shrimps; cooked -- shelled and 1 Large onion -- grated 2 Thin slices of ginger root -- powdered ginger 1/2 teaspoon Powdered turmeric Salt and pepper 1 Hot green chili pepper or 3 cups Chicken broth 1 cup Thick coconut cream -- * Reserve a few whole shrimps for garnish. Mince the remainder and pound to a paste or puree in a blender. Make a paste of the onion, garlic, turmeric, cumin, 1/2 tsp of salt and add a spoonful of water if needed . Heat the butter and cook the spice paste for 3 to 4 minutes. Add shrimp paste, chili peppers or tabasco and chicken broth. Stir and simmer for 20 minutes. Add the coconut milk and half the coconut cream. Bring to a boil . Correct the seasoning and serve with 2 tablespoons of rice to each serving and a spoonful of coconut cream as a topping, garnish with whole shrimp. * COCONUT CREAM is unsweetened - - - - - - - - - - - - - - - - - -
