* Exported from MasterCook * Egg Noodles Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Pasta Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 c Seminola flour 4 Eggs -- beaten lightly 1 1/2 ts Salt 2 ts Olive oil 2 ts Warm water Sift flour onto clear work surface. MAke well in center of flour and pour the 4 lightly beaten eggs into well. Add salt and oil. Mix ingredients with your hands, gradually adding water making a dough soft enough to handle. If to dry add more water drop by drop. If too wet add flour. Knead until dough is formed into a soft ball, about 10 minutes. Rolling, Cutting and Cooking: Cover kneaded dough with plastic wrap and place int refrigerator for at least 1 hour and up to 2 days. Divide dough into 3 pieces and roll each into an 1/8 inch thick sheet. Let rest 5 minutes. Cut into noodles with a sharp knife or press theough a manual pasta maker. Dry on a rack for at least 1 hour before cooking. Do not overcook. Drop in boiling salted water and start testing pasta as soon as water returns to a boil.
