* Exported from MasterCook * Barley Vegetable Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium Onions -- peeled & diced 1 large Carrots -- scraped & diced 1 Celery stalks -- chopped 2 tablespoons Butter 28 ounces Tomatoes -- chopped 4 cups Water -- or beef stock 1 teaspoon Sugar 1/2 teaspoon Basil leaves 1/4 teaspoon Thyme leaves 1 cup Barley 1/2 teaspoon Dill leaves 8 ounces Green beans -- or peas Cut up frozen green beans or green peas to make 2 cups. Saute onions, carrots, and celery in heated butter in large kettle for 5 minutes. Add tomatoes, water, sugar, basil, and thyme. Bring to a boil. Stir in barley and lower heat. Cook slowly, covered, 1 hour, until barley is tender. Stir in beans or peas during last 10 minutes of cooking. Remove from heat and stir in dill .
