* Exported from MasterCook * Carrot Horseradish Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups **Edited Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Oil 1 Small onion -- minced 1/2 Large stalk celery or 1 smal 1 Stalk -- minced 1 Clove garlic -- minced 2 Large carrots -- finely diced 2 cans 10 1/2 oz.ea.beef consomme 6 ounces Water 1 tablespoon Prepared horseradish 2 teaspoons Butter 2 teaspoons Flour Pepper to taste In saucepan,heat oil and add onions,celery,and garlic.Lightly saute until onion is transparent,about 5 minutes.Add carrots,consomme and water.Cover tightly,bring to a boil,reduce heat and simmer until carrots are tender,about 15 minutes.Add horseradish .Combine butter and flour into a paste,then drop,in small bits,into gently simmering soup.
