* Exported from MasterCook * Fresh Tomato Soup With Aioli Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons Olive oil 4 large Onions -- slice thin 2 teaspoons Granulated sugar 12 pounds Ripe tomatoes; peel, seed -- chop 1 cup Fresh basil leaves 4 tablespoons Fresh thyme -- mince 2 Whole cloves 2 Bay leaves Salt and black pepper 4 Garlic cloves -- mince 1/2 cup Parsley -- mince 4 teaspoons Aioli Heat the olive oil in a large saucepan and saute the onions until soft and translucent, about 10 minutes. Add the sugar, tomatoes, basil, thyme, clove, bay leaves, salt and pepper. Simmer, stirring often, until the tomatoes break down into a sauce, about 20 minutes. Remove the bay leaves and cloves; puree the mixture in a blender or food processor . Reserve half the puree for a later meal. If the remaining puree is too thick, thin to the consistency you prefer with water. Return to the heat and simmer another 5 minutes. Turn off the heat.
