* Exported from MasterCook * Red Potato Soup with Garlic and Wild Greens Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Vegetarian Vegan Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Red potatoes -- rinsed 1 Leek -- chopped 1 medium Onion -- diced 40 milliliters Garlic 2 Jalapeno -- seeded and minced 3 cups Swiss chard -- chopped s stems 4 medium Tomatoes -- chopped coarsely 2 cups Plum tomatoes, canned -- chop 4 cups Vegetable stock -- or water 1/4 teaspoon Salt 1 teaspoon Pepper -- cracked 3 tablespoons Vinegar -- balsamic Combine all ingredients in a stockpot and bring to a boil. Cover, reduce heat and simmer until potatoes are soft, about 35 min. Cool slightly and puree in small batches in a blender . Return all pureed batches to stockpot and reheat.
