Bring to a boil, skim, then cover and boil gently for 2 hours. Remove the chicken and take the meat off the bones. Return the meat to the broth, add the peas and rice, and cover, then boil gently for 5 minutes. Add the spinach, cover, and boil until rice is cooked, about 10 minutes.
