* Exported from MasterCook * Valentine Ring Around Recipe By : Country Folk Art Magazine, February 1993 Serving Size : 8 Preparation Time :0:00 Categories : Salads Fruit Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups cottage cheese, creamed 6 ounces cream cheese 1 teaspoon unflavored gelatin 1/4 cup cold water 3 cups seedless green grapes -- halved 1/2 cup pecans -- chopped 2 tablespoons fresh chives -- or freeze-dried 1 cup whipping cream 1 1/2 cups water 3 ounces cherry gelatin powder --or raspberry Process the cottage cheese and cream cheese in a blender or food processor until smooth. Put into a mixing bowl. Soften the unflavored gelatin in the cold water. Heat for 30 seconds in a microwave on 100 percent power or dissolve over hot water. Stir the gelatin mixture into the cheese mixture. Add the grapes, pecans and chives. Whip the cream. Fold the whipped cream into the salad mixture. Pour into an oiled 5 or 6-cup mold or individual molds. Bring the 1 1/2 cups water to a boil. Dissolve the flavored gelatin in the boiling water. Pour into a lightly oiled 9-inch square pan. Chill to set. Unmold the salad mixture on a serving plate. When the red gelatin is firm, cut out hearts with a cookie cutter. To remove the first cutout, slit a piece of gelatin between the designs and pull out the scraps; lift the cutout with a spatula. Serve on top of the unmolded salad.
