Preheat the broiler. Using a swivel-bladed vegetable peeler, scrape the asparagus, starting about 2 inches from top of tips. Line up the tips of the asparagus uniformly on a flat surface. cut off the ends 3 to 4 inches from the bottom. Discard the ends. 2. Place the asparagus in a skillet large enough to hold them and add cold water to cover. add salt to taste. Bring to the boil and simmer from 1 to 5 minutes. Cooking time will depend on the size of the asparagus and how crisp you wish them to remain. Preferably they should be crisp-tender, not limp. Drain immediately. 3. Arrange the asparagus uniformly in a heatproof dish. Sprinkle with butter and cheese.
