* Exported from MasterCook * Asparagus with Cheese Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Asparagus* Cheese* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Fresh asparagus 2 teaspoons Butter 2 teaspoons Flour 1/4 teaspoon Salt 1 cup Asparagus stock 1/2 cup Milk 1/4 cup Grated cheese Wash the saparagus, trimming off the course parts; tie them in bunches. Cook asparagus in a deep kettle, in boiling salted water. Use as a rule of thumb one teaspoon of salt for one quart of water. Stand the asparagus up so that the tips are out of wwater. Partially cover the kettle, and boil until the lower part of the asparagus is tender. Now make a white sauce by melting the butter in a saucepan; add flour and salt, stirring constantly, until smooth. Add the asparagus stock gradually, and stir after each addition. Add the milk, stirring constantly, and cook for 5 minutes. Place the asparagus in a greased pan and pour your sauce over it, sprinkling cheese on the top.
