A little half-and-half thins the hollandaise so that it pours well. Be sure to stir the sauce well and frequently to keep it smooth. 1. Arrange asparagus in a 2-qt rectangular casserole, alternating tips and ends. A dd water. Cover. Microwave at HIGH 6-8 minutes, until just ten- der, rearranging stalks after 4 minutes.. Drain. Arrange 4-cup measure. Microwave at HIGH 1 minute to melt. Stir in lemon juice and half-and-half. Gradually whisk in egg yolks. 3. Microwave at HIGH 1 1/2-2 minutes, w hisking every 20 seconds, until mixutre has thickened. Stir in salt and nutmeg.
