Snap each spear off at thick end (each spear will break at it's own most tender spot.) Asparagus is easily cooked in your largest frying pan which permits you to lay the stalks flat and cover with water. Add 1/2 teaspoon salt; Cover and bring to a boil. Uncover and boil slowly until the spears start to bend, ( about 4 minutes.) Test one. It should be just cooked through with a slight crunch. Serve hot with melted butter and lemon wedges. If cooking long before serving, drain white asparagus and lay out spears on white paper towels. Drain green asparagus and plunge the spears into cold water to keep the color bright.
