* Exported from MasterCook * Carrot Ring with Creamed Peas Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Carrots 3 tablespoons Butter 2 tablespoons Flour Salt 1/2 cup Milk 3 Whole eggs 1 Egg yolk 1 Egg white -----CREAMED PEAS----- 2 packages Frozen peas 3 tablespoons Butter 3 tablespoons Flour 1/8 teaspoon Pepper 1/8 teaspoon Nutmeg 1 cup Milk 1/2 cup Light cream Slice carrots into 1" pieces. Place carrots in a 10" skillet with lid. Add boiling water; add 1 tsp. salt. Bring to boil. simmer 25-30 min. Drain; mash. Grease a 4-1/2 c. ring mold. Heat oven to 350. Melt butter in saucepan. Stir in flour, 1/2 tsp. salt, and pepper until smooth. Gradually stir in milk. Bring to boiling, stirring; boil 1 min. Remove. Add mashed carrots. Beat whole eggs and egg yolk slightly. Add to carrot mixture. Beat egg white until soft peaks. Fold into carrot mixture. Turn into mold. Set mold in baking pan with boiling water . Bake 50 min. or until set. To serve: loosen mold; fill center with creamed peas. Peas: cook peas; drain. In saucepan melt butter; remove and stir in flour, 1/2 tsp.
