* Exported from MasterCook * Swiss Creamed Peas Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups frozen peas -- 3 (10 oz.) packages 2 cups sliced green onions 3 tablespoons butter or margarine 2 tablespoons flour 2 cups whipping cream 1 teaspoon finely shredded lemon peel 1 1/2 cups shredded swiss cheese In a large saucepan, cook peas according to package directions. Meanwhile, in a medium saucepan, cook onions until tender, but not brown. Blend in flour and 1/2 teaspoon salt. Add cream and lemon peel. Cook and stir until thickened and bubbly. Add cheese and stir until cheese is melted. Do not boil. Drain peas; return to large saucepan. Add sauce; stir to coat peas. Serves 12 - - - - - - - - - - - - - - - - - -
