* Exported from MasterCook * Broccoli-Stuffed Onions Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Broccoli* Onions* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 medium Vidalia onions 1 pound Broccoli 1/2 cup Parmesan cheese -- grate 1/3 cup Mayonnaise 2 teaspoons Lemon juice 2 tablespoons Butter/margarine 2 tablespoons All-purpose Flour 2/3 cup Milk 1/4 teaspoon Salt 3 ounces Cream cheese -- cube Peel onions and cut a slice from the tip of each. Cook in boiling water 15 minutes or until tender but not mushy. Cool; remove centers leaving shells intact; set aside. Chop centers and set aside 1 c. (Reserve remaining chopped onions for other recipes.) Trim off large leaves and tough ends of lower stalks of broccoli ; wash well. Cook in a small amount of boiling water 10 minutes or until tender; chop and set aside. Combine 1 c chopped cooked onion, chopped broccoli, cheese, mayonnaise and lemon juice. Lighlty pack mixture into onion shells; arrange onions in a greased 12x8x2 baking dish. Melt butter in a heavy saucepan over low heat; add flour and cook, stirring, until smooth. cook 1 minute, stirring constantly, until thickened and bubbly.
