* Exported from MasterCook * Onion Cornbread Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Cornbread* Cheese* Onions* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup Butter or margarine 1 1/2 cups Vidalia onion -- chop 1 cup Sour cream 1 dash Of salt 1 cup Sharp cheddar cheese -- shred 1 package Corn muffin mix (10-12 oz) 1 Egg -- beaten 1/2 cup Milk 8 1/2 ounces Cn Cream style corn 2 drops Bottled red pepper sauce Preheat oven to 425'. Grease 8" square pan; set aside. In medium skillet over medium heat, melt butter or margarine. Add onions and saute until tender, about 10 min. Cool slightly. Add sour cream, salt and 1/2 c cheddar cheese to onions; set aside. In medium bowl, combine corn muffin mix, egg, milk, corn and hot pepper sauce; stir until smooth. Spread batter in prepared pan. Spoon onion mixture evenly and gently atop the batter. Sprinkle on remaining cheese. Bake for 30-35 min or tunitl toothpick comes out clean. Serve warm. - - - - - - - - - - - - - - - - - -
