                             Onion Shortcake

   1                    Vidalia onion -- large
     1/4  cup           Butter
   1 1/2  cups          Corn muffin mix
   1                    Egg -- beaten
     1/3  cup           Milk
   1      cup           Cream style corn
   1      cup           Sour cream
     1/4  teaspoon      Salt
   1      cup           Sharp Cheddarcheese -- shredded

Slice onion into rings and cook slowly in butter until transparent.
Combine mix, egg, milk, and corn.
Pour into buttered 8-inch square pan. 
Add sour cream, salt, and half the cheese to onion.
 Mix well and spread evenly over corn batter. 
Sprinkle with remaining cheese. Bake at 425^ for 30 minutes. 
 Serve hot.
